Grapes Lagrein
Characteristics Colour: ruby red with violet hues.
Bouquet: black fruit, such as blackberry blueberry and plum. The bouquet is completed by a touch of vanilla, spice and almond resulting from long ageing in wood.
Taste: robust, structured yet delicate, with a controlled acidity that perfectly reflects the climate of origin.

Pairings: a wine with a strong personality, it is at its best with rich, spicy hors d'oeuvres based on cured meats and mature cheeses. It enhances first courses based on ragout, baked pasta and second courses based on game and grilled meats.

Vinification

The Lagrein vineyards are cultivated from 250 to 400 m a.s.l. using the simple pergola as the training system, which allows perfect exposure of the grapes to the sun. The grapes are selected by hand and vinified at a controlled temperature for approximately 18-20 days with the addition of selected yeasts and repeated pumping over and delestages in order to gently extract all the fruit and polyphenolic structure contained in the grapes. After malolactic fermentation, the wine matures for 14-16 months in first, second and third passage French oak barriques with medium toasting.
