Characteristics
Colour: slightly ochre straw yellow.Nose: complex and elegant, fruity, with hints of yellow melon, acacia flowers, yellow apple, apricot, white melon and rose.
Taste: full and dry, harmonic, refined, with moderate acidity and soft finish.
Pairings: excellent as an aperitif, goes well with hors d'oeuvres, soups, vegetables and fish.

Vinification
The grapes are harvested by hand around mid-September and undergo traditional vinification with brief contact on the skins to increase the extraction of the grape's characteristic varietal aromas. The must is then subjected to fermentation at a low temperature.
